I originally wanted to make some tacos but then decided I wanted to make my own salsa because I never can really find the kind I like at the supermarket, especially in white suburbia.
So I went to the cheapest store in my area and got all the essentials I could think of/find online.
My list:
3 Roma Tomatoes
1 Red Onion
1 Green Pepper
1 Red Pepper
1 Jalapeno Pepper
1 "Bunch" of Cilantro
1 Clove of Garlic
And then some yellow rice, pinto beanz, and tortilla.
I could have gotten away with using 4 in the end, but 3 was fine. They were super fresh and just right.
Filled a little more than half of my bowl.
The onion was a tough call. I love onions and really don't mind a lot of them in just about anything but I didn't want to take away from the rest of the ingredients so I used the smaller half of the whole onion.
Next time I will chop (cut) them a little finer but it was just the right amount I would say, my face was on fucking fire when I got done with this part.
You wont find this kinds of peppers in most salsas but I am a huge baby when it comes to spice, so I had to replace that kind of super hot taste with something a little less intense. I used half of the half of the whole pepper, so a quarter; I did the same for the red pepper also.
Since the truth about me being a spice baby is already out, I can admit to looking for the smallest jalapeno pepper I could find. (In hind sight I remember hearing/reading something that the smaller the pepper is the hotter it's spice is? Maybe that's just scorpions.) But yeah, I put it in there just to say I could... mostly.
Two little pieces of garlic were all I needed, I read that garlic was a secret to good pico de guillo and I actually believe it because the shit makes everything else taste great.
Last was the cilantro. A lot of people I talked to hate this shit... I can not understand that. When I smell it, it just smells like mexican food to me. I absolutely love it, but regrettably I think I used too much in this particular batch. I also didn't cut it fine enough... dam.
Pre mix.
Post mix, finer onions and less cilantro. Check.
I put that in the fridge and started up the rest of my meal:
There was way more in this package that at first appeared.
I will try a different brand/method next time I want to cook beans, these kind of sucked. I may have overcooked theme, and by cook I mean let sit in hot water for an extended period of time while I bragged to people on instant messenger about how good my fucking salsa turned out.
Got some tips on how to warm these up and didn't burn myself, awesome.
